Ghisolana winery

Our vines are born among the hills of Monfumo, in the heart of the
Consorzio Asolo Montello. Here the clay and limestone soil
encounters a climate characterized by large temperature ranges,
thus allowing our grapes to retain all their aromatic charge.

Tradition, innovation but mostly respect to authentic values: these are the milestones on which our history was founded.

We want to guarantee the consumer a high-quality biological product by creating producive processes that fully respect and preserve nature.

What's the meaning of biological wine?

Respect the environment and nature without any residual
synthetic products in wine.

Why choose biological?

We do not use herbicide but a milling of the
soil along the vine row, with manure fertilization
seasoned and without nitrogen fertilizers but using copper,
Sulfur and pyrethrum in allowable amounts following respect for animals in the wild.

HOW DO WE WORK

How is harvesting done?

Grapes harvested only by hand in boxes.

The love for the land and its fruits has been passed down from generation to generation to the present day.

Vineyards stretch across the rolling hills of Monfumo, opening amphitheatrically overlooking the hills of the area at the foot of the Grappa Massif.

Here, since time immemorial, the special soil composition, mild climate and enviable exposure to the sun are the best conditions for optimal vine cultivation and production of high quality wines.

Biodynamic Agricolture

For fertilization, when necessary, we use only manure derived from organically managed farms, for soil fertility we use preparations of biodynamic origin that allow a perfect natural supply of bacteria, yeasts and molds for healthy soil.

Hand picking

All cultivation operations in the high hills are carried out by hand, minimizing soil trampling and the presence of machinery in the vineyard. This, together with the absolute absence from ever weeding, allows for a great biodiversity of grasses, flowers and insects.

Exceptional material

The possibility of processing an exceptional raw material such as grapes from high hills, which by natural privilege have a higher sugar content than the lowlands, a higher sapidity and an excellent health status, makes it possible to minimize cellar operations.

We love our territory made of tradition, quality and beauty so we want to preserve it by passionately pursuing viticulture and the production of Asolo prosecco DOCG in a sustainable and renewable way.

Wine production process

Fermentations are controlled by adjusting the temperature; cleaning of musts first and new wines later is achieved only by static decantation, without clarification.

The level of sulfur dioxide in our wines is minimal, as we start from grapes with excellent health appearance and work in reduction, that is, in the absence of oxygen, with the dual effect of preserving the primary aromas of the grapes .
